Anticuchos

ANTICUCHOS

Anticuchero Seasoning is a Peruvian seasoning mix, used to marinate cow heart, to make: “anticuchos”, that became popular in the colonial times and it was a common preparation for afro slaves who developed his gastronomy mixed with the Peruvian.

Serves: 4

Ingredients:

  • 1 beef heart or any other type of meat
  • 6 tbsp Uku panca chili paste
  • 3 tbsp Uku yellow chili paste
  • 2 cup of red vinager
  • 4 clove of garlic
  • Oregan
  • Sesame seeds
  • Wooden skewers (kebab-style)
  • 1 corn-husk brush (for applying marinade and oil)

 

Mix 6 tablespoon of panka, 3 tbsp of yellow chilli and smashed garlic into a bowl and mix all together. Then add the red vinager, oregan and the sesame seeds. Correct the flavor with salt and leave it to rest for 15 min. Then add the chunks of beef heart or the meat you like most, and let them marinate for at least a couple of hours. 

When the pieces of beef heart have absorbed flavor, thread 3 to 4 of them onto each skewer, and grill it.

Beef heart anticuchos can be served with a piece of parboiled corn and potatoes cut into round slices that can be roasted on the grill.
